Pancetta Prune Focaccia

Ingredients

85g diced pancetta
1/2 red onion, thinly sliced
450g ball pizza dough
1/2 cup Sunsweet® Amaz!n™ Prunes, Diced
60g fresh mozzarella cheese
2 Tbsp chopped fresh rosemary
aged balsamic vinegar

Instructions

Preheat oven to 230°C. Sauté pancetta and onion in a medium skillet over medium-high heat for 10 minutes, stirring frequently; set aside. Knead Amaz!ns™ into pizza dough then roll or stretch into a 9×12 inch oval, and place onto a large baking sheet. Top with pancetta mixture, then tear cheese into small 1/4 inch pieces and scatter over pancetta. Bake for 15 to 20 minutes or until crust is golden brown. Sprinkle with rosemary and serve warm drizzled with balsamic vinegar.
